German Apple Pancake, One Pan Binds Them

I usually am a pretty plain person when it comes to pancakes. I like them with just maple syrup and that’s about it This was a fun things to try because it wasn’t as simple and looked fun to make. That’s all. No long story about it. It just caught my eye and off I went. So let’s go.
Ingredients
1 tbls butter
1 apple
1 tbls brown sugar
1 1/2 tsp cinnamon (or more because come on, it’s cinnamon. You can’t have too much)
2 eggs
2 egg whites
1 tbls sugar
1 tsp vanilla
Pinch of salt
1.2 cup flour
1/2 cup milk
Maple syrup if you like it
Prep
Preheat oven to 425 F
Peel the apple and cut it into slices. If you don’t have a peeler a knife can be carefully used. But I learned to get a peeler (I haven’t)
Take a cast iron pan and heat it to about medium and melt the butter
Add the apples, brown sugar, 1/2 tsp cinnamon (or more) to this and stir
This should take about 5 minutes to get the apples to start to soften
Remove the pan from the heat
Separate the apples so they make a layer on the bottom without overlapping each other
Add the eggs, egg whites, sugar, cinnamon, vanilla and sat in a bowl and whisk it until it’s well blended and getting just fluffy
Pour this over the apples
Bake for at least 20 minutes. The top will get puffy and golden brown. When you pull it out, it will deflate like crazy fast.
Maple if you love it. (who doesn’t??)
Afterthoughts
This tasted great. The apples were soft and cinnamon goodness. They paired well with the maple. I wish I had added more cinnamon I think to the pancake itself but it still worked like a pancake and did me well. This was easy and made plenty to serve. I highly recommend this for a fast breakfast that also gives people fruit.
