Spruce up a Box: Chocolate Chip Cupcakes

Prep: 15 Minutes plus cooling Bake: ~15 minutes

Today’s recipe is just having fun with some box mix. It doesn’t take a lot to add a little something extra or fun to any old box mix. Today I used chocolate chips and melting chocolate to have this fun.

Ingredients

  • 1 box golden butter cake

  • 1/2 bag of mini semi-sweet chocolate chips (or as desired)

  • 1/2 cup melting chocolate

  • 3 eggs

  • 1 cup water

  • 1/3 cup soft butter

Allowing them to cool usually matters with icing. With this it’s mostly important to be able to hold them

  1. Preheat the oven to 350 F

  2. In a bowl prepare the box mix with the water, butter, eggs, and cake mix

  3. Mix well

  4. Add in the chocolate chips. Fold these in.

  5. Prepare your cupcake pan with the sleeves

  6. Pour the batter into the cupcake sleeves, I used about 2 tbls per cup then added more with ones that looked less than half full

  7. Bake for 14-17 minutes

  8. Cool for at least 10 minutes

  9. When cool, take the melting chocolate and melt in the microwave

  10. Take the cooled cupcakes and dip into the chocolate, or spread as desired

Afterthoughts

You want to wait til the chocolate hardens  before eating but tasty either way

These were fun to make and even more fun to eat. The chocolate chips added a fun surprise with each bite, similar to the candies in Cosmic brownies. The chocolate on top was rich and delicious and when cooled made a fun crunchy topping with it. This was like those magic shell chocolate for ice cream. It was a lot of fun for just a box mix.
