Compote or Jam? A berry way to enjoy with many things

For my Berry Cake recipe we got to learn a compote/jam to add to the cake. I had some left over from the last time I made it and am using it for biscuits. Without the preservatives it won’t last as long but it is a great tasting jam that you can smear where you want. I wanted to dedicate a post just for it, since I love it so much.

Ingredients

  • 1 cup water

  • 12 oz frozen berry of choice (I used a wild berry mixture of raspberries, blueberries, cherries, and blackberries because that’s what I love.)

  • 1/2 cup sugar

  • 4 tbls corn starch

  1. Set a sauce pan on low to medium heat. You want it to get hot, but not too hot too fast

  2. Add the water, sugar, and the berries (still frozen) to the pan and stir

  3. Keep stirring as it warms and take your spoon or so and smash the berries on the side of the walls like they insulted your loved ones to help liquefy them

  4. Slowly raise the temp if you need because you will want it to boil gently

  5. In another bowl add the cornstarch and the water and stir fast to it mixes without hardening like cartoon cement

  6. Pour it into the sugar, berry, water mixture and stir, stir stir

  7. While you stir it will start to congeal like blood and get thicker

  8. You want to keep a close eye as you stir to make sure it gets that jam consistency

  9. Transfer to a bowl and stick it in the fridge to chill until you need it

I think this tastes so amazing. I loved it on cake and now I’m adding it to biscuits and trying to come up with more and more ways to use it. I know it won’t last but it’s so easy and non scary to make. I want to know how many more fruits I can use to make this. Maybe peaches or apples or dragon fruit. I just need it to be frozen and willing to melt like berries do. An easy jam families can make (and singles because who needs to share?) and will liven up meal accessories.
