C'est La Cuisine Feature: Pork and Apples

C’est La Cuisine had the theme of apples to celebrate this fall season. My dish was a fun dinner that mixes flavors and cooks apples with pork, onions and more for a fun savory taste with a hint of sweetness in it. This was super easy and all able to be done in a single skillet which as you might know, is my favorite way to cook.

Ingredients

  • 1-2 Pork Chops

  • Salt to taste

  • Pepper to Taste

  • Paprika to taste

  • 2 tbls olive oil

  • 1/2 cup white wine

  • 1/2 sliced onion

  • 1 chopped shallot

  • 2 thinly sliced apples

  • 1/2 cup chicken broth

  • 1 tbls lemon juice

  • 1 tbls butter

After adding back the pork

  1. Heat a skillet/pan to about medium heat

  2. Use the salt, pepper and paprika (I also used a hint of Thyme) to rub the pork chop

  3. Add the oil to the skillet and when it’s warmed add the chop

  4. Cook each side 3-4 minutes until it’s almost done. It does not need to be fully done just yet

  5. Add the white wine and the shallots to the skillet and cook on high heat to reduce the wine

  6. Remove everything to a plate and set it aside

  7. Reduce the heat back to medium

  8. Add the apples and onions to the skillet and stir to warm until they start to stick and brown. By the end of the dish the onions and apples should be soft not crunchy.

  9. Add the broth then the pork, shallot mixture with all runoff (flavor) back in

  10. Up the heat so that this will simmer, better to go to a boil then reduce down

  11. Let cook until the pork is done which should be at 145 internal temp

  12. Add the butter and lemon juice and stir

This dish was a lot of fun to make and taste. The combination of flavors from my apples with the onion, shallows and pork was so interesting and worked in a way you wouldn’t really expect. I know people cook with apples but I haven’t really eaten anything like this before. The savory taste was on point and so good, then the slight sweetness from the apple was perfect. The lemon cut down on too much sweet and the sauce that it all makes was easy. There’s a few ways to spice up and add more flavors but as is, this was a nicely balanced dish that easily hit the spot.
