Valentine's Special: Blueberry Buttercream
Prep: 3 minutes Cook: 10 minutes
To celebrate those we love, cooking something delicious can bring smiles to all faces. Buttercream icing is some of my favorite types of icing and with a mixture of blueberries can make this extra sweet and fun.
Ingredients
1 cup softened butter
3 cups powdered sugar
12 oz (at least) blueberries
2 tbls heavy cream
1 tsp vanilla extract
Salt to taste
Splash of water
Prep
In a pot at medium heat, add a splash of water and the blueberries
Stir often and simmer until the blueberries breakdown and liquify. This will be just a bit thick and not completely liquid depending on how much water you added
Pour through a strainer to remove the skin and anything else from the mixture
Set aside to cool completely
In a medium bowl add the softened butter and beat until creamy
Mix in the powdered sugar and mix fully to a fun cream
Add the heavy cream, vanilla, salt and blueberry liquid
Mix fully until you have a creamy icing.
This can keep for a couple days in the fridge but needs softened to room temp before trying to spread
Afterthoughts
Buttercream is always a tasty addition to baked treats. Blueberry takes a butter cream and makes it slightly sweet and takes your treats to a new level. This is an easy and fun way to surprise any loved ones.
