Tomato Cream Pasta with Shrimp

Prep: 10 minutes Cook: 10-15 minutes

I love pasta and I love the different ways the sauces can be created. This uses oil to shrivel some grape tomatoes and mixes some old favorites and fresh mozzarella for a delight in the mouth. Shrimp add a bit of protein and the whole thing is a joy.

Ingredients

  • Penne as desired

  • 1/8 chopped onion

  • 6 grape tomatoes cut in half

  • Red Pepper Flakes as desired

  • Garlic powder as deisred

  • Minced Garlic as desired

  • Oregano as desired

  • 2 oz fresh mozzarella

  • 3 tbls butter

  • 2 oz or as it looks good heavy whipping cream

  • pinch of salt

  • 2 tbls olive oil

  • 4-5 jumbo shrimp

Prep

  1. Set water in a pot to boil

  2. Chop onions and tomatoes

  3. Heat a pan to medium high

  4. Add olive oil, tomatoes, and onions

  5. Heat until onions are softening and tomatoes are shriveling

  6. Add butter and melt

  7. Add the garlic and other spices

  8. Add pinch of salt to water when it is boiling

  9. Add penne and allow to cook to al dente based on box time requirements

  10. Add the shrimp to the sauce pan to heat up

  11. Reduce heat to a low-medium

  12. Add the cream sauce and allow to simmer

  13. Add the mozzarella and stir until it is starting to melt

  14. When pasta is done, save some pasta water, 2 tbls worth and add to sauce

  15. Strain pasta and add to pan

  16. Mix fully and allow to finish cooking together

Afterthoughts

This was delicious and completely easy. Everything worked smoothly and melted together as needed. The Italian flavor palate went well with the shrimp and it wasn’t too fishy at all. The penne is a great pasta choice to go with cream sauces. This is a fast and easy way to feed a group.
