Sweets for all Gluten and Egg Free Cinnamon Roll

Prep: 10 minutes Bake: 26-28 minutes

We have a coworker that is Gluten Free and for his birthday we had a surprise party of food he can eat, since most of our events at work he is limited on choices. I found this cinnamon roll cake and it was a great selection for something he normally wouldn’t get to eat. It was super fast and easy to make and stores at room temperature. I also did the egg free version for another coworker with an allergy so he could have some too.

Ingredients

Cinnamon Cake

  • 1 1/2 cups of gluten free flour (there are so many types of this, just look at the grocery. I used 1 to 1 for this over all purpose)

  • 2 tsp gluten free baking powder (I didn’t know this was a thing but it is)

  • 1/4 tsp salt

  • 1/3 cup granulated sugar

  • 3/4 cup milk

  • 1 flax egg which uses 1 tbls ground flax seeds and 3 tbls water mixed and left sitting to thicken

  • 1 tsp gluten free vanilla extract (I didn’t know this was a thing either and didn’t find any so I left it out and it tasted decent anyway)

  • 1/4 cup melted butter

Cinnamon topping

  • 1/4 cup melted butter

  • 1/4 cup packed brown sugar

  • Cinnamon as you please

Cinnamon Glaze

  • 1 cup powdered sugar

  • 1 tsp cinnamon (or more if you love it like I do)

  • 2 tbls milk

Prep

This fills the pan well

I went crazy with the cutting

  1. Preheat your oven to 350 F

  2. Grease a round cake pan. 8 inch is sufficient

  3. In a mixing bowl add the flour, salt, baking powder and sugar and mix it a bit together

  4. Add the milk, flax egg, vanilla (if you have it) and butter for the cake

  5. Mix this completely

  6. Pour into the baking pan

  7. In another mixing bowl add the cinnamon, butter, and brown sugar for the cinnamon topping and mix this all over

  8. Add to the top of the cake

  9. Use a knife or something to swirl and cut this into the cake batter

  10. Bake for 26-28 minutes

  11. Let cool for at least 10 minutes

  12. In another mixing bowl add the powdered sugar, cinnamon and milk to make the icing

  13. Mix until smooth

  14. Pour over the cake as desired

Afterthoughts

A tasty treat good warm or not.

This was stupid simple and fast to make. Everything came together nicely and smoothly. The taste was just like a cinnamon roll which I was concerned it would be too dry. That was not the case. This had a coffee cake feel without the flour and the gluten free aspects did not take away from a great cinnamon roll at all. This will be a great desert to include diets and you can even take away the dairy if you need to with substitutes. I chose not to.
