Valentine's Special: Strawberry Mini Cakes
Prep: 20 minutes Bake + cooling 25-30 minutes
Strawberry is one of the unofficial mascots of Valentines and this cake combines strawberry with chocolate in a fun form. Using an ordinary cooking method, you can create something just a little extra. Strawberry mini cakes.
Ingredients
Strawberry cake box mix
egg as indicated on box
water as indicated on box
veggie oil as indicated on box
4 oz baking chocolate
1 tub of cream cheese icing
Prep
Preheat your oven to 350 F (177 C)
Follow the box to mix the strawberry cake batter
Take cupcake tins and spray and flour to make non stick
Pour in about half to three quarters full with mix (do not use paper cups)
Bake about 20 minutes or until fully cooked
Remove and allow to cool fully
While cooling, melt the bakers chocolate in the microwave
Pour it into a heart mold, you need at least 6
Place in freezer to set
Cut the tops off the cupcakes to make flat tops and have just the stems
Take one and spread icing on top
Stack another on top and repeat up to four high or 2 if you want. You can use tooth picks as dowels in the center to stabalize
Icing as desired
Take a chocolate heart and add on top
Crumble the removed heads for extra decoration on top
Afterthoughts
This was an extra way to handle cupcakes but still looked fun and brought joy to my family. Strawberry cake smelled and tasted like the strawberry milks my mom used to drink and the chocolate was a good compliment as we all well know. This was easy, fast and fun to make something a bit more fun.
