Southern Comforts with Melting Potatoes

Prep: 5 minutes Bake: 50 minutes

I have a lot of potatoes right now. Seriously, I have two pounds of them and needed something. That’s when I found this melting potatoes. It’s a fun take on baked potatoes that makes a melty inside with a crispy outside. This was a lot of fun to make and makes a wonderful side dish. I could see this with some steak or grilled chicken. I’ll give the recipe closer to how I found it, but I only made this with one potato and eye balled everything else to my tastes.

Ingredients

  • 4 potatoes

  • 1/2 stick of butter

  • 1/2 tsp salt or to taste

  • 1/2 tsp pepper or to taste

  • 1 tsp thyme or to taste

  • 1 cup chicken broth or veggie

  • 2 cloves minced garlic or to taste

Prep

You want to make sure the butter is all over the slices

It’s best to use a tray with edges

  1. Preheat your oven to 450 F

  2. Melt the butter and add the salt, pepper and thyme and stir

  3. Slice the potatoes into thick slices. Mine were about a half an inch to an inch

  4. Add the slices and butter mixture to a bowl and toss to coat the slices

  5. Add to a baking tray

  6. Bake for 20 minutes

  7. Take out and flip the slices

  8. Bake for 15 more minutes

  9. Add the garlic to the broth

  10. Pull out the slices and flip again

  11. Pour the broth mix over the slices and bake for 15 more minutes

  12. I added some more melted butter and thyme on top before serving

Afterthoughts

Even one potato was a lot but by golly is it tasty and easy to eat

Melting is the best description for this. The insides just hugged the tongue and were fluffy, delicate potato while the outside was just short of crispy and kept it well together. This is a fantastic side that begged for a main dish while holding it’s own. I could easily see this with chicken or steak. This didn’t feel too heavy for southern comfort but it was still an entire potato smothered in butter. I could easily see this topped with sour cream, cheese or more. Something that takes a while but is worth the wait.
