Festival Month: Shredded Chicken Sandwich

Shredded chicken is a more rare sandwich but one that I loved more than pulled pork. While it’s more likely to find one that is creamy as opposed to just straight up shredded meat. This is a version that isn’t likely to be sold in a booth but the way that I like my shredded checked.

Ingredients

  • 2 chicken breasts

  • 4 oz cream of mushroom soup

  • 2 cups chicken broth

  • Garlic powder to taste

  • Pepper to taste

  • 1/4 chopped onion

  • 1 celery stock

  • 1/4 cup of bread crumbs (I used flavored ones which I think was too strong, an unflavored one would be better)

  • Buns

Prep

  1. In a pot add the chicken broth and spices as desired

  2. Heat to boiling and add the chicken

  3. Cook until falls apart easily and no longer pink

  4. Remove the chicken and shred. I used two forks to shred

  5. Pour out all but 1/4 cup of the chicken broth

  6. Add the chicken back in and the chopped vegetables

  7. Add the cream of mushroom soup

  8. Mix and heat on medium until the soup is warmed through

  9. Add the bread crumbs until thick enough to scoop onto a sandwich

Afterthoughts

I used Italian herb bread crumbs which made the spice taste a bit too strong with the amount of others I added in. Other than that, this was delightful and worth every bite. I had scarfed two sandwiches down before coming up for air.
