Pork in Creamy Italian Sauce

Prep: 10 minutes Cook: ~25 minutes

I’ve said before, pork is one of my favorite dishes that I never get to eat. I had a craving for some and that’s what led me to this creamy Italian sauce for some pork chops. This was fast and easy and I only needed one skillet for all of it.

Ingredients

  • 2 thin boneless chops

  • 3 tbls butter

  • 2 tbls at least minced garlic

  • 1/2 chopped onion

  • 1.4 sliced red pepper

  • 1/4 tsp paprika and extra to taste

  • Salt to taste

  • pepper to taste

  • thyme to taste

  • 1 1/2 cup heavy cream

  • Fresh Basil (I used dried basil and added in 1 cup spinach)

  • 1/4 tsp red pepper flakes

  • 1 cup grated parmesan

  • 1/2 cup white wine

Prep

  1. Heat the skillet to about medium high

  2. Melt 2 tbls butter

  3. Rub pork with salt, pepper and some thyme and paprika to taste and season

  4. Add to the skillet, cook each side 3-4 minutes or until at least 145 F

  5. Set aside and cover to keep warm

  6. In skillet add 1 tbls butter (or more if you’re like me and love butter)

  7. Add the onion, garlic, paprika, red chili pepper, red pepper, and some salt and pepper to taste

  8. Heat this all together to saute for at least five minutes but check softness of the veggies

  9. Add wine and let simmer to reduce

  10. Lower heat to medium low and add cream

  11. Stir to make a creamier sauce

  12. Add the cheese and stir to melt

  13. Wilt in basil (or spinach like me)

  14. Add pork chops back and heat up to serve

Afterthoughts

I love pork and I love cream sauce. The spices in this made it hot without being spicy and was a beautiful herb heat in the cream sauce. It was the perfect compliment to the pork and a great dinner. This is easily adjusted to serve a family. The bursting taste is big and varied but the heat from the pepper is strong. I highly recommend this amazing dish.
