One Pot Beef Stroganoff

I remember friends loving beef stroganoff while I was growing up and I’ve had a few versions but have never made it. I really wanted to try and checked a few different versions and I Wash You Dry had a one pot version that lead us here.

Ingredients

  • 1 lb ground beef

  • Olive oil

  • 2 tbls butter

  • 1/2 diced onion

  • Paprika to taste

  • Salt to taste

  • Pepper to taste

  • 8 oz mushrooms (white button is good)

  • 3 tbls flour

  • 4 cups beef broth

  • 1/2 cup sour cream

  • 4 cups egg noodles

  • Splash of a dry wine, I used white

Prep

  1. In a deep pan or pot add the olive oil

  2. Add the mushrooms and heat a few minutes to soften

  3. Remove the mushrooms and add the butter to the pan

  4. Cook the beef and diced onion in the butter

  5. If you’d like, drain the fat and return to the pan

  6. Add the flour to thicken with the butter and remaining moisture

  7. Add a splash of the wine and reduce

  8. Add the broth and seasonings and boil

  9. Reduce to a simmer and add the egg noodles

  10. Cook for about 8-10 minutes until soft and tender

  11. Return the mushrooms

  12. Add the sour cream and mix in fully until nice and creamy

Afterthoughts

This was super tasty. The sauce was creamy and the eggs super tender. The beef went great in and the seasonings while simple complimented the dish. This is a fast and easy meal for a family to enjoy and easy to reduce for someone to devour on their own.
