Mediterranean Pork Jambalaya

I was very excited for this dish. It’s all an experiment that worked out for me. I wanted to make something healthier, lighter and fun and this dish made it. Using similar ingredients to normal Cajun jambalaya but the spice palate of the Mediterranean, this fun dish is a different way to experience things.
Ingredients
Meat Rub
Pork (or whichever meat you want)
To taste:
Cinnamon
Salt
Pepper
Cumin
Coriander
Nutmeg
Body
Mild Italian sausage
Cauliflower rice
Red Pepper
Green Pepper
Onion
Green Onions
Minced Garlic
To taste:
Basil
Marjoram
oregano
Rosemary
Thyme
Red Pepper Flakes
Sage
Olive Oil
Chicken Broth
2 tbls butter
Prep
In a cast iron pan or equivalent add the olive oil and start the sausage to cook mostly through. I sliced it pre cooking to make sure it fully cooked
Slice the pork (or meat) into strips and toss in the rub
Add the pork to the pan to cook through as well
While the meat is cooking chop the veggies for how much you want
Remove the done meat from the pan
Add the butter and some more olive oil and add the onion and peppers to cook until soft about 5 minutes
Add the minced garlic and heat through a little
Add the spices and mix fully
Add back the meats and cook and stir mix and warm through
Add about 1 cup of the broth
Add the cauliflower rice and allow to boil then set to simmer until the rice is cooked. With this rice instead of normal it should only take 3-5 minutes and most of the liquid has boiled out
Remove and serve
Afterthoughts
This had the right taste that makes me picture the Italian countryside from movies. I managed enough herbs to bring out the flavor without it being bland or overpowering. The rice cooks super fast but worked well. I highly recommend this dish and it’s so easy to make plenty to share. A great dinner for all that isn’t too hot.
