Mediterranean Night: Seasoned Tilapia in Veggie Soup

I am super jazzed about looking at more Mediterranean dishes. The colors, herbs, veggies, and oil is just such a joy to see and eat. This was a mixture of a few different recipes I looked at and came together deliciously!

Ingredients

Tilapia Marinade

  • 1 -2 tilapia fillets

  • salt to taste

  • Pepper to taste

  • 1 1/2 tsp oregano

  • 1 tsp coriander

  • 1 tsp paprika

  • Minced Garlic to taste

  • 1 tsp basil

  • 6 tsp olive oil (extra virgin)

  • 1 tbls lemon juice

Veggie Soup

  • Paprika to taste

  • Salt to taste

  • Pepper to taste

  • Coriander to taste

  • Cayenne to taste

  • 1 tbls butter

  • 3 tbls olive oil

  • 3 shallots (I used green onions)

  • Minced or chopped garlic to taste

  • 1/2 green bell pepper

  • 1/2 yellow bell pepper

  • 1 cup diced tomato

  • at least 1/3 cup chicken broth

  • 2 tbls white wine

  • 2 tbls lemon juice

    Prep

  1. Start with the marinade

  2. Add the tilapia and all seasonings and oil to a bowl and coat it

  3. Cover and stick in the fridge for at least 30 minutes

  4. When about done, preheat the oven to 425 F (220 C)

  5. Prep a tray with foil to bake the tilapia on

  6. Bake the tilapia for 15 minutes

  7. In a large skillet or pot heat to medium heat to get the soup started

  8. Chop the veggies as you please to be ready to add to the soup. I did the peppers in strips instead of diced.

  9. Meanwhile add the butter and oil for the soup and heat until the butter is melted

  10. Add the shallots and garlic

  11. Cook for 2-3 minutes until fragrant

  12. Add the peppers and all spices and cook for another 4 minutes or so, softening them up

  13. Add the tomatoes, broth, lemon, and white wine

  14. You can boil to reduce the wine some but at the least you just want to make sure it’s all heated through

  15. Add the tilapia on top

Afterthoughts

This was a delectable dish. The spices on the tilapia and in the soup matched and just melded together. The soup was great on it’s own and the tilapia fell apart and tasted great. This was warm in all the right ways and a fun meal. There was so much flavor everywhere. This was super fast and easy to make and I’d recommend it for anyone wanting to add some color and flavor into their diet.
