Loaded Smashed Potatoes

Loaded Smashed Potatoes

Prep: 12-15 minutes Bake: ~ 15 minutes

I saw a delicious looking reel from OneBalancedLife on Instagram and really wanted to try this recipe. The result was a great side dish and snack that we devoured really quickly. This had a bit of waiting around for the potatoes but was super easy overall and completely easy to modify and make it your own!

Ingredients

  • Gold Gourmet Potatoes (the tiny ones) (as many as you want, I did 9)

  • 3 slices of bacon (more or less depending on how many potatoes you cook)

  • 1 tbls melted butter

  • .5 tsp of garlic powder

  • Green onions or chives to garnish

  • 1/3 cup shredded cheddar (more or less depending on amount of potatoes)

Prep

  1. Preheat oven to 450 F (232 C)

  2. In a pot, boil water

  3. Add potatoes and boil for 10-12 minutes or until they are soft when poked with a fork

  4. Drain and spread potatoes out on a tray

  5. Use something like a glass to smash

  6. Mix garlic powder into melted butter

  7. Brush over the top of the potatoes

  8. Bake for 12-15 minutes until crisped as desired

  9. While potatoes are baking, cook bacon and crumble

  10. Pull out potatoes and cover with cheese and bacon

  11. Bake for 2 minutes to melt cheese

  12. Top with green onion or chives

Afterthoughts

These were such a great snack. I cooked mine a little longer and they stayed nice and soft and a great snack. You can use any dipping sauce like sour cream or ranch to enjoy this with! It’s similar to a potato skin but with more potato involved to bring out a taste. The brushed butter was a great touch, though you can reduce the calories by using an avocado spray as in the original recipe! A great side and snack that takes little effort, just a bit of waiting.
