Banana Foster Filled Muffins

Prep: 20 minutes Bake ~ 23 minutes

My neighbors gave me a bunch of bananas as a thank you gift so I wanted to make something to share back with them. I know someone who’s favorite dessert is Banana foster and that lead us here. This is a muffin that has a banana foster filling as a surprise inside.

Ingredients

Filling

  • 2 tbls butter

  • 1 just ripe banana

  • 1/4 cup brown sugar

  • 1 tsp vanilla extract

  • 1/4 tsp cinnamon

Muffin

  • 2 1/2 cup flour

  • 1/2 cup brown sugar

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 1 cup milk

  • 1/2 cup melted butter

  • 1 egg

  • 1 tsp vanilla extract

  • 1 overripe banana

Crumb Toppings

  • 2 tbls soft butter

  • 2 tbls sugar

  • 1/4 cup flour

  • 1/4 tsp cinnamon

    Prep

    Filling

They’ll be just brown after flipping

The chunks should be decently small

  1. Preheat your oven to 400 F (200 C)

  2. Start with making the filling. Heat a skillet to a medium heat

  3. Add 2 tbls butter to the skillet and let it melt

  4. Slice the banana into slightly thicker slices (1/4 in) and add the slices to the skillet

  5. Heat each side about 2 minutes and it’ll slightly brown

  6. Add the brown sugar, cinnamon and vanilla and mix with the slices

  7. Chop the banana slices up into smaller bits and mixes around

  8. Heat this for about 2 more minutes

  9. Add to a bowl to cool while making the rest

Muffin

  1. Grab another bowl for the muffins

  2. Add the flour, salt, baking powder, and cinnamon and mix

  3. Grab yet another bowl and add the milk, eggs, butter and vanilla

  4. Whisk this together fully

  5. Slowly add in the dry ingredients and whisk until it forms a thicker batter

Crumble topping

The crumble is so similar to the top of a coffee cake

  1. Grab (you guessed it) another BOWL for the crumb topping

  2. Add everything in and stir until it’s a crumble mixture

Assemble

Just want them covered

  1. Prep your muffin tins as you want

  2. Fill them about halfway with batter

  3. Put a dollop of the foster filling in the center and press just slightly

  4. Cover with the rest of the batter

  5. Add the crumble topping and press it slightly in as well

  6. Bake for at least 23 minutes or until they are rising and looking good

Afterthoughts

These had so much banana in them. The flavor punches you in the face. The muffins were soft and flavorful. I think I’d add a hit of caramel if I made them again. If you love banana this is the recipe for you, everything about it is seeping in it. It’s best warm. This would make families happy and be a great way to get bananas used before going bad.
