Arepas Con Queso

Arepas Con Queso

Prep: 20 minutes Cook: 3-5 minutes per arepa

Arepas are a staple item in many South American countries. They are a Pre-Colombian treat that has grown and evolved to be sold in many varieties in many regions and countries. You can add any number of flavors to make them a meal on their own, or keep them simple enough for a snack. They are super simple to make and only need three ingredients for a plain and original. Makes about 6 hamburger sized arepas.

Ingredients

  • 2 cups white corn flour

  • 2 tsp salt + extra for taste

  • ~3 cups of water (likely will need more)

  • 1 cup shredded mozzarella

Prep

  1. Add the corn flour and salt into a bowl and mix

  2. Add the water slowly, about a half cup at a time and use a wooden spoon to mix well. You might need more water, but around 3 cups is a good starting place

  3. You want this to be solid enough to bind, without being too sticky. It can take a surprising amount of water and not be too wet.

  4. When you can shape the dough, add the cheese and mix throughout.

  5. When mixed fully, place a towel over the bowl and let rest for 10 minutes

  6. This should make about 6 arepas but depending on how small you make them, you can definitely get more, that will cook through easier

  7. Split the dough and form around 6 patties that are flat on each side. If you’d like a cheese center, you can make a bowl shape, add extra cheese to the center, and close the bowl around the cheese to seal it in

  8. Heat a cast iron skillet to about a medium heat and spray with a non stick spray or add butter to the pan to melt

  9. Add the patties to the pan and allow to cook about 3-5 minutes each side

  10. Top with salt, or butter and enjoy

Afterwards

Arepas are a versatile treat that can be used in so many ways. This soft, bread like snack was warm, crumbly and the cheese was nice and melty. I enjoyed every bite. Next time, I’m adding butter and maybe some more flavors to make a meal out of it.
