Apple Pie Crumble Cupcakes
Prep: 15 minutes + cooling Bake: 20-25 minutes
Fall is my favorite season for tastes (Italian is my favorite herb/spice palate) and so I’m in full on soup and apples and warm foods mode. This came as an idea for adapting my Peach Cobbler Coffee Cake and turned out pretty wonderful! This makes about 2 dozen cupcakes.
Ingredients
Cake
1 cup butter softened
1 cup sugar
2 eggs
3 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/4 cups sour cream
Crumble topping
1 cup flour
At least 1/4 tsp cinnamon but have more
1/2 cup fast cooking oats
1/2 cup cold butter cubed
1 cup brown sugar
Apples
2 honey crisp apples diced
1/2 stick butter
1 tbls cinnamon (more if you desire)
1 1/2 tsp nutmeg
1/4 cup brown sugar
Glaze
~2 tbls milk
1 cup confectioners sugar
Prep
Apples
Heat a pan to medium heat
Melt the butter and allow it to brown not burn
Add the apples, brown sugar, nutmeg, and cinnamon
Mix well and let cook until apples are tender
Set aside to cool
Cake
Cream the butter, eggs, vanilla, and sugar together
Add in the sour cream and gently mix in
Add all dry ingredients into a second bowl and mix
Add 1/3 dry ingredients into butter etc. mixture while mixing
When first bit is incorporated, add the next 3rd and repeat with the last
This will firm up and not be a liquid
Prepare cupcake bottoms in pan
Crumble
Dump all ingredients into a bowl
Use a dough cutter or food processor to cut the butter in with the rest to make a crumble
Add the solid apples and mix well
Assemble
Preheat oven to 350 F (177 C)
Scoop the cake mix into the cupcake cups about 3/4ths full
If you want to, fill about half way then pour a little of the left over brown sugar, cinnamon mix from the apple pan on top and finish filling to get some cinnamon bands in the center
Top with the crumble mixture and press down lightly to help hold in place
Bake for 20 -25 minutes
Set out on wire wrack to cool
Glaze
Add powdered sugar and milk into a bowl and mix thoroughly
Add more milk or sugar to thicken or thin as desired
Use a spoon to drizzle over cupcakes
Afterwards
This was best warm! The flavors were nice and warming to the taste, which is that perfect compliment to fall. The cake part is nice and fluffy and moist (shoutout to the sour cream) and paired great with the crumble. A great treat for anyone that loves apple pie and cakes.
