Tomato and Asparagus Dip

Prep: 5 minutes Bake: 20-25 minutes

I saw a recipe for a similar dish on Instagram and came up with this version with a bit more veggies. This is a party favour size and will serve a few people.

Ingredients

  • 1 cup grape tomatoes

  • 5-6 stalks of asparagus

  • olive oil

  • 3-4 slices mozzarella

  • Italian herbs to taste

  • oregano to taste

    Prep

  1. Preheat oven to 400 F (200 C)

  2. Break the asparagus into smaller chunks

  3. Add the tomatoes and asparagus to a casserole dish

  4. Drizzle generously with the olive oil

  5. Add the herbs to taste and preference

  6. Bake for at least 15 minutes

  7. Remove and stir

  8. Return to oven and bake for 5-10 more minutes or until tomatoes are wrinkling and softened

  9. Remove from oven

  10. In a serving dish, add the mozzarella slices

  11. Pour the tomatoes and asparagus on top of cheese and allow heat to melt the cheese

  12. Use a bread like a baguette and spread on top with spoon

Afterthoughts

This was delicious. I loved every bite. I used a baguette with garlic butter and it worked well. The cheese choice can change and a softer cheese will melt and spread better but the mozzarella goes amazing with the Italian herb flavours. This will impress at any dinner party as an appetiser.
