Mom's Meatloaf

Mom had a rotation of meals while I was growing up. She had the same work schedule every week and had a rotation of meals minus the one night my dad cooked. I liked many of them but one I wanted to recreate was her meatloaf. This was one of my favorites of her meals and it was actually made pretty rare compared to the other meals in the rotation.

Ingredients

  • 1/4 cupish Quaker oats

  • 1 pound beef

  • 1 egg

  • 2 tsp minced garlic or garlic powder to taste

  • 1/4 onion

  • 1/4 red or green pepper

  • 1/4 cup milk

Prep

  1. Preheat oven to 375 F

  2. Chop the onions and peppers

  3. Mix the literally everything together in a bowl

  4. Line a glass pan of at least 8 x 8 with aluminum foil

  5. Shape the meat mixture into a loaf in the pan

  6. Bake for 35-40 minutes or until no longer red

Afterthoughts

This dish has been among my favorites throughout childhood and has evolved many times. Adding the veggies, changing the ratios and more. I still love meatloaf the way mom makes it and this super easy to make dish is great for any dinnertime.
