Marble Sponge Cake

Prep: 20 minutes Bake: 12-15 minutes + cooling

My mom has always loved marble cakes when I was younger. I decided to make her one for her birthday this year. This is basic and fun.

Ingredients

Sponge Cake

  • 3/4 cups + 2 tbls softened butter

  • 1 1/4 cup flour

  • 4 large eggs

  • 1 3/4 cup powdered sugar

  • 1 2/3 tbls baking powder

  • 1/2 tbls cocoa powder

Buttercream Icing

  • 1 cup softened butter

  • 3 cups powdered sugar

  • 1/2 tbls vanilla extract

  • 2 tbls heavy cream

Prep

Sponge Cake

  1. Preheat oven at 350F (177C)

  2. Add the butter to mixer with a paddle attachment

  3. Mix until creamy

  4. All the powdered sugar and mix

  5. Add the eggs one at a time while mixing

  6. Switch to a whisk

  7. Whisk until fully mixed and airy, does not need to keep its shape

  8. Remove a half cup to three fourths cup of the batter and set aside

  9. In a separate bowl, add the flour and baking powder and mix

  10. Pour flour mix into batter and fold gently

  11. This will become thick and more like a dough

  12. Spray two 9 inch circle cake pans or line for non stick

  13. Split the batter between the pans and spread out

  14. Add the coco powder to the set aside batter and mix fully

  15. Drizzle the chocolate butter in the pans and swirl

  16. Bake 12 - 15 minutes

  17. Allow to cool fully before icing

Buttercream icing

  1. Add the butter and powdered sugar to mixer

  2. Cream together

  3. Add the vanilla and heavy cream and cream together

  4. Optional: add coco powder for chocolate taste

  5. Ice the cake

Afterthoughts

Mom loved the cake, though it was a little dry after sitting in the fridge. The buttercream was a good pair with the sponge though I wanted a stronger chocolate taste. It is an easy and fun cake to make and a small one that can impress people visually.
