Marble Sponge Cake

My mom has always loved marble cakes when I was younger. I decided to make her one for her birthday this year. This is basic and fun.

1 1/4 cup flour

1 3/4 cup powdered sugar
1 2/3 tbls baking powder
1/2 tbls cocoa powder
Buttercream Icing
1 cup softened butter
3 cups powdered sugar
1/2 tbls vanilla extract
2 tbls heavy cream

Add the butter to mixer with a paddle attachment
Mix until creamy
All the powdered sugar and mix
Add the eggs one at a time while mixing

Remove a half cup to three fourths cup of the batter and set aside

Cream together
Add the vanilla and heavy cream and cream together
Optional: add coco powder for chocolate taste
Ice the cake
Afterthoughts
Mom loved the cake, though it was a little dry after sitting in the fridge. The buttercream was a good pair with the sponge though I wanted a stronger chocolate taste. It is an easy and fun cake to make and a small one that can impress people visually.
