Almost Chicken Pot Pie but with Biscuits in Cast Iron Pan

Prep: 20 minutes Bake 8-10 minutes

I love pot pies and I don’t make them often. I saw this recipe com through from iwashyoudry.com and I wanted to try it. It’s a newer take on a pot pie where it’s an almost stew with biscuits in it. This was fun to prep though timing is everything. You need to have the next thing prepped to not burn or overcook any one part. I did neglect one thing that changed the taste and that was seasoning the chicken. Make sure you give your chicken love man or it’s going to be eh.

Ingredients

  • 2 tbls butter

  • Minced onion

  • 1 cup carrots sliced

  • 1 cup or less (cause come on…really?) celery sliced

  • 2 tsp minced garlic (or a lot more, like a LOT more)

  • 1/4 cup flour

  • 1 tsp dried thyme

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 2 cups chicken broth

  • 1/2 cup milk

  • Chicken as desired

  • 1 cup Peas if you like that (I don’t)

  • 1 tube of biscuits however you want (I used homestyle buttermilk)

  1. Add whatever seasoning you want to the chicken and get it cooked through. I added it to the skillet and cooked in butter. I then shredded it some

  2. Preheat oven to 400 F

  3. Melt the butter on medium heat in the skillet

  4. Add the veggies minus the garlic and get them all tender. You don’t want that crunch so much

  5. Add the garlic. You want them fragrant. Get that nice smell going

  6. Add the flour, thyme, salt and pepper and stir for a couple minutes. Get it everywhere, and try not to burn it

  7. Slowly add in the broth and milk and whisk it together

  8. Let this mixture cook and thicken. I’m bad at thickening, but just let it bubble and get there. You’ll want it

  9. Add the chicken and stir for a bit, making sure everything is nice and warm

  10. Add the uncooked biscuits to the top

  11. Bake until they are golden brown and done

I didn’t season my chicken and that cut me deep. I needed more punch to my mixture so I added some cayenne. This gave a bit more of a kick, but there was still a smooth taste that needed something more. I also overcooked some parts which hurt me as well. The taste overall fit together, I just needed something more. I want to revisit this and add more butter and more garlic. I also had way too much celery as I don’t care for it too much. This was simple and easy as everything was cooked in one skillet. Having things prepped and ready to go in helped. This was a fast meal that would make for an easy family dinner and can be set to the tastes of anyone eating it.
